Ingredients

  • For the Syrup:
    500g dark muscovado sugar
    60g natural honey
    2 cinnamon sticks
    2 slices of lemon
    500ml fresh carrot juice
  • For the Baklava:
    1kg carrots, peeled
    350g walnuts, finely chopped
    150g ground almonds
    1½ tsp ground cinnamon
    ½ tsp ground nutmeg
    ¼ tsp ground cloves
    1 box fresh phyllo pastry
    165g unsalted butter, melted
    115g cinnamon butter (or additional butter with cinnamon), melted
    Sea salt, to taste
    Icing sugar, for dusting

Instructions

1. Prepare

Preheat the oven to 180°C (fan-forced).

2. Juice the Carrots

Use your juicer to extract fresh carrot juice.

  • Reserve 500ml juice for the syrup
  • Set aside the carrot pulp for the filling

3. Make the Filling

In a large bowl, combine:

  • Carrot pulp
  • Walnuts
  • Ground almonds
  • Cinnamon, nutmeg, and cloves

Mix well until evenly combined.

4. Assemble the Baklava
  • Brush 3 sheets of phyllo pastry with melted butter and layer them
  • Spread an even layer of the carrot mixture
  • Roll tightly into a log

Repeat with remaining ingredients.

5. Cut & Arrange

Cut each roll into 2 cm pieces.
Place them tightly in a buttered baking tray, cut side up.
Brush generously with remaining butter.

6. Bake

Bake for 30–40 minutes until golden and crisp.

7. Make the Syrup

In a saucepan, combine:

  • Muscovado sugar Carrot juice
  • Honey
  • Lemon slices
  • Cinnamon sticks

Bring to a boil, then simmer for 2–3 minutes, stirring until dissolved.

8. Finish

Remove baklava from the oven and immediately pour over the hot syrup.
Let it cool completely so the syrup fully absorbs.

9. Serve

Lightly dust with icing sugar before serving.


Tip

Serve with cream cheese ice cream for an extra indulgent touch.
